New Opening: Food Led Gastro, Cocktail Wine Bar + Rooms
Location: City of London
Salary: £28,000 to £29,000 pa
Working Hrs: 5 Days / 7 Shifts (45 – 50 hrs)

COMPANY INFO
Award-winning independent group of rosette level eateries (gastros and bistros) set to launch fourth site from mid-April with official opening on 1st May.
Beautifully refurbished City gastro with cocktail wine bar in super-chic marble fifties-retro design with 15 bedrooms and rooftop space.
Food: weekly rolling modern British menu showcasing own-grown produce alongside sourcing from small artisan South East based growers and producers. All made in house (butchery, fish prep, smoking, brining, pickling, baking, etc) from newly-built open kitchen. Expect robust flavours, good modern technical cooking and quirky touches.

7 day operation (breakfast / lunch / dinner): forecasted to be busy from launch onward.
Also offering private dining, exclusive hire and rotation of special events, workshops and masterclasses throughout the year.

ROLE DESCRIPTION
Working closely with the Head chef supporting all aspects of kitchen management – responsibilities include:
Pre-opening: assisting with kitchen set-up; cooking / practising new menu; team orientation and training
Weekly menu planning / costings & specs
Working alongside the Head chef; deputising in the Chef’s absence; responsible for maintaining the daily smooth running of the kitchen and service (ensuring all standards are upheld on a consistent basis)
Assisting with stock management & ordering; wastage / kitchen cost control; daily kitchen admin and rostering; daily compliance files and procedures
Brigade of 4 chefs to start (2 on service)

SALARY & BENEFITS
Start salary: £30,000 to £31,000+ pa (basic + tronc package)
Permanent full-time contract subject to standard 3 months probationary period incl. regular performance related salary reviews; ongoing in-house development; courses as required; workplace pension option; 28 days paid annual leave; movement and progression; involvement in further new openings; FAM trips; team excursions; staff discounts; meals on duty & laundered uniform

Approx. 45 – 50 hrs p wk / 7 shifts over 5 days
April Start (able to accommodate notice)
