Location: Central London / West End
Package: £34,000 start salary pa + £6,000 annual bonus
Working Hrs: 7 / 8 Shifts (5 days)

Stylish, hip 2 AA rosette Restaurant Bar hot-spot set over 2 floors, situated in the heart of the West End – featuring first-floor dining room with cool traiteur lounge bar on ground floor, open kitchen and private dining space for up to 40 guests.
Award-winning monthly changing menus (and wine list) showcasing seasonal, authentic Mediterranean cooking in the modern style – sourcing premium produce from small, artisan UK and Continental suppliers re: provenance – vibrant sharing and small plate concept style.
Well-equipped / maintained kitchen centred on cooking over wood-fire; average 40 to 70+ lunch and 80 to 150+ dinner covers plus private dining and exclusive hire; ongoing rave reviews and press interest since launch.
7 day operation: 12:00 pm to 10:00 pm / 11:00 pm (busy pre-theatre trade)

ROLE DESCRIPTION
Supporting the Head chef (Rosette cooking background) in all areas of daily kitchen management with brigade of 10 to 11 chefs plus 4 KPs (4 – 6 chefs & KPs on service).

Key duties:
Daily kitchen & team management, deputising in Head chef’s absence
Supervision of busy kitchen operation – ensuring quality and standards are maintained on consistent basis
Menu development (Executive & Head chef collaboration)
Stock management: purchasing, supplier relations, quality / cost control, invoices, stock auditing, maintaining GP target
Staffing: assisting with recruitment, training & development, rotas, personnel files, etc
Daily back office paperwork and compliance (invoices, time sheets), cleaning rosters & maintenance of kitchen & equipment

DESIRED ATTRIBUTES
Experience at Sous chef level within a comparable kitchen; passion for / background in Mediterranean cooking.
Good knowledge of current food trends; all-round skill set – creativity, drive, leadership, organisation, communication and team training skills.

SALARY & BENEFITS
Package: £34,000 start salary pa + £6,000 annual bonus
Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance / food sales dependent); courses as required; 28 days paid annual leave; workplace pension option; group staff discounts; FAM trips & team excursions; laundered uniform & meals on duty
Future scope: development; progression & movement within the group
Approx. 50 – 55 hrs p wk / 7 to 8 shifts over 5 days incl. Weekends
Immediate Start available / able to accommodate notice
