Position: Sous Chef
Operation: Local Gastro Pub & Garden
Location: East London
Salary: £27,500 pa
Working Hrs: 5 Days / 7 Shifts

Beautiful (refurbished) local Gastro with garden offers an eclectic monthly changing menu of gastro favourites and modern European dishes supported by market-driven daily specials (all food prep from scratch / in-house).

Commitment to sourcing from local quality suppliers serving average 50 – 70+ covers per day.
Covers: 60 inside / 60 outside

Role
Supporting the Head Chef in all aspects of kitchen management with small brigade (4 chefs & KPs), duties include:

Daily & Monthly menu planning including costing & specification sheets
Deputising in the Chef’s absence; running service / pass; team direction & organisation; maintaining high food quality & service standards
Stock management; ordering; supplier relations & invoices; monthly stock audits; maintaining target GP
Team training & development, kitchen admin., compliance & HACCP files and procedures, maintenance of kitchen & equipment

Desired Attributes
This would suit a Sous Chef who loves to be creative and has a good grasp of seasonal ingredients.
Required skill set – confident at running service; strong plating and presentation skills; good communication and organisation levels; ability to work methodically, motivating and encouraging the team accordingly.

Salary & Benefits
Start salary: £27,500 basic pa

Permanent contract subject to standard 3 months probationary period; excellent development; regular salary reviews; workplace pension option; 28 days paid annual leave; staff discounts; FAM trips and team excursions; laundered uniform; meals on duty

Approx. 48 to 50 hrs p wk / 7 shifts over 5 days incl. Weekends
Immediate Start available / able to accommodate notice
