Salary: £26,000+ pa & paid OT
Working Hrs: 7 Shifts Over 5 Days

This exclusive Boutique Hotel & Restaurant with Cocktail Lounge attracts an A list crowd; gaining an unrivalled reputation since launch with ongoing Press and media interest.
Acclaimed, trend setting Michelin star Executive Chef with brigade of 50+; high spec open kitchen with breakfast / brunch, lunch & dinner menus showcasing ingredients-focused cooking (bold, contemporary, healthy & seasonal) including team of 6 in the pastry kitchen.

Food style: modern European with International accents
Approx. 250 to 400 plus covers per day (250 for dinner) & exclusive hire & private parties

Role Description
Working closely supporting Head Pastry Chef as follows (team of 6 in pastry / 3 to 4 on service):
Daily fresh food production – all in-house, fine desserts, petit fours, ice creams, biscuits, confectionery, sugar & chocolate work
Deputising in HPC absence – organising & supervising team of 2 – 3 pastry juniors on section
Daily stock control, receiving deliveries, section orders, wastage control
Commis / Demi chef training & development
Compliance files, HACCP and cleaning rosters
Menu input encouraged

Own Professional Development – modern techniques, kitchen management, inventory & people management.

Desired Attributes
Min 12 months experience as a Pastry Chef de partie in a comparable / modern Restaurant, Members Club or Boutique Hotel operation
Good all round skill set – organisation, technical and attention to detail
Passion to cook & learn – ambition and drive
Reliable with intention to offer a long term commitment to next role

Salary & Benefits
£26,000 – £27,000 start package + Paid Overtime (same rate / additional shifts worked)
Permanent full time contract subject to standard 3 months probationary period
Shift pattern: 7 Shifts over 5 Days
