Junior / Sous Chef-2 AA Rosette Independent-Development-Progression

POSITION: Junior / Sous chef
OPERATION: Acclaimed Restaurant, Gastro & Terrace (2 AA rosette)
LOCATION: City of London
SALARY: £33,000 to £35,000 pa package
WORKING HRS: 5 Days / 7 Shifts (50 – 53 hrs)

This stunning City 3-floor independent (1 & 2 AA rosette level) attracts a loyal City crowd all year round, receiving ongoing media and press high-praise since opening.
Operation: ground-floor gastro (wood-panelled bar & period features) / monthly changing modern British (1 AA rosette); first floor open & airy dining room with weekly changing produce-driven menu (seasonal 2 AA rosette Brit-Euro-Med); terrace and open-air grill plus open kitchen – sourcing from small suppliers, farm and estate producers – championing ethical practises and values – focus on quality (and value), overall guest experience.
Menus: robust flavours, good technical elements, quirky touches, great flavours, modern presentation (all made in-house from scratch) supported by a rotating range of cask craft ales, natural wines and botanical cocktails.
7 day operation – busy for lunch and dinner throughout the week / year….popular for private parties with additional (various) food and wine workshops and events scheduled season to season. Pic-nic hampers on offer / popular during summer months. Informed, relaxed service style – welcoming home-from-home vibe.
Service: 12:00 pm to 3:00 pm lunch (closed Monday lunch); 6:00 pm to 10:30 pm dinner Mon to Sat
Av. Weekly net food sales: £15,000 to £18,000 / rising to £30,000 over December period

Working closely with the Head and Snr-Sous chef team with good development and mentorship (progression opportunities), duties include:

Daily menu planning (costing & specs.)
Deputising in Head / Sous chefs’ absence: running service, team direction & organisation, maintaining high food quality & service standards
Stock control: ordering, supplier liaison & invoices, stock audits, wastage management, helping to maintain GP target
Team training & development, daily compliance files (H&S, Food Handling, etc), cleaning rosters & kitchen / equipment maintenance

Start package: £33,000 to £35,000 pa
Jnr Sous chef paying £26,000 basic plus tronc (paid monthly) and bonus (£33,000 pa)
Sous chef paying £28,000 basic plus tronc (paid monthly) and bonus (£35,000 pa)
Permanent full-time contract subject to standard 3 months probationary period incl. regular performance related salary reviews; ongoing in-house development; courses as required; workplace pension option; 28 days paid annual leave; movement and progression within this famed independent group; FAM trips; staff discounts; meals on duty & laundered uniform
Approx. 50 – 53 hrs p wk / 7 shifts over 5 days
