Operation: Popular Local Bar + Burger Kitchen independent
Location: South West London (NW5)
Start package: £33,000 to £35,000 base salary pa & £5,000 annual bonus
Working Hrs: 5 Days / 7 Shifts

COMPANY INFO
Popular bar + kitchen independent situated in central North West London – features cosy open plan dining space with banquets, counter bar plus heated terrace out front.
Menu: all fresh, made on site….emphasis on sourcing best seasonal ingredients from small UK producers and suppliers. Offering a great range of artisan ‘dirty’ burgers along with healthy vegan-vegetarian bowl-food plus a punchy weekend brunch offering (full English, avocado-egg dishes, pancakes, etc) – supported by an exciting range of classic and house cocktails, wine, continental craft beer and shakes.
Relaxed, informed service style; home-from-home atmosphere & vibe; regular live music (jazz to funk) and comedy events. Also popular for private hire and parties.
Av. £5,000 to £6,000 weekly net food sales (this time of year) rising to £8,000 to £9,000 pwk (good regular / repeat custom)
Covers: steady mid-week, peaking at weekends (kitchen open from closing 9 pm – 10 pm)

ROLE DESCRIPTION
Responsible for all aspects of kitchen management, working closely with the General Manager with the support of Sous chef, chef + KP team (4 chefs + 1 KP) from a well-equipped basement kitchen (dumb-waiter), responsibilities include:
Seasonal menu planning + dish development; costings, specs and tastings
Daily kitchen management: planning and organisation, team direction and supervision, ensuring smooth service delivery, maintaining highest levels of quality and standards on ongoing basis
Stock / inventory management: purchasing, supplier relations, invoices, computerised stock sheets, wastage control, monthly audits, maintaining set GP target
Team hiring, training & development
Kitchen admin: rostering, personnel files, P&L and compliance records
EHO relations, maintenance of kitchen and equipment, regular staff and management meetings, supplier site visits

Dedicated management team focused on overall guest experience and satisfaction, quality and standards, team development and business growth. 2020 new London openings confirmed (opening average four London sites per year).

DESIRED ATTRIBUTES
This role would suit a confident, creative and experienced Head chef with a background and passion for cooking really great, stand-out ‘dirty’ burgers.
Good knowledge of current food trends; strong organisation & training skills; proven track record of delivering on GP & targets without compromise to quality & standards.

SALARY & BENEFITS
£33,000 to £35,000 base salary to start pa & £5,000 annual bonus (paid quarterly)
Permanent contract subject to standard 3 months probationary period; regular salary reviews;  courses as required; 28 days annual leave; workplace pension option; FAM trips and team excursions; staff discounts; laundered uniform; meals on duty; strong operational support
Future scope: movement and involvement in new openings; group ops. support progression opportunities
Approx. 50 – 55 hrs p wk / 7 shifts over 5 days incl. weekends
