Head Chef-Cosy Victorian Pub-Classic British Pub Fare with Twist

Position: Head chef
Operation: Traditional British pub + kitchen (home distillery)
Location: West End
Start package: £34,200 pa (£30k basic + £4.2k bonus pa)
Working Hrs: 7 shifts over 5 days incl. weekends (45 to 50 Hrs)

Cosy Victorian pub with home-distillery offering modern take on classic British fare – busy trade through the week (particularly busy mid-week lunches, also offering British brunch and classic Sunday lunch).
Sourcing from small UK and Continental suppliers (re: quality and provenance); quarterly / seasonally changing menus (GP target of 65%)
Warm-welcoming, relaxed yet attentive service style; special touches and attention to detail; popular for large bookings, celebrations, venue hire (canape / bowl food menus) – offering range of tasting and master classes re: home distillery
7 day operation / kitchen service: 12:00 pm to 9:30 pm (early close Sunday)
Weekly net sales of £6,000 to £7,000 pa (increasing over festive period)

Reporting to and supported by the General Manager and Group Executive chef, working closing with the FOH management team to develop menus and evolve the food offering with British pub theme in mind.

Brigade: Head chef, Sous chef, 2 Jnr chefs plus 2 KPs

Overall responsibilities:
Menu development (costings, specs, tastings)
Daily smooth running of the kitchen and service; daily fresh food production; expediting
Stock and inventory management; ordering and supplier relations; invoices; auditing; GP calculation (65% GP target)
Team hiring, leadership, support and development – creating a positive and proactive work environment encouraging team input and ownership
Overall kitchen cost control; kitchen admin; rostering; personnel files; H&S / HACCP; kitchen compliance records; maintenance of kitchen and equipment; management meetings

Seeking a confident, creative Chef with flair for menu development (fun take on traditional British pub fare)
Good knowledge of current food trends; passion to work with high quality, seasonal produce supported by good organisation; strong communication, leadership and team training skills.

Start package: £30,000 basic salary pa (paid monthly) + £4,200 annual KPI-related bonus (paid quarterly)
Total: £34,200 pa available
Permanent contract subject to standard 3 months probationary period: regular salary reviews (performance and food sales dependent); movement plus opportunities to be involved in new openings (three 2020 openings confirmed); 28 days paid annual leave; workplace pension option; team excursions; FAM trips; laundered uniform; meals on duty
Management discount: £30.00 daily tab for use at all group venues / 50% discount thereafter
Approx. 45 – 50 hrs p wk / 5 days incl. Weekends
