Location: SW London
Start package: £44k to £45k pa (£39k to £40k basic & £5k bonus)
Working Hrs: 5 Days / 7 Shifts (50 to 55 hrs)

Destination SW London Bistro-Gastro independent launched earlier this year – massively popular with locals and go-to diners with highly favourable reviews, write-ups and ratings since opening.
Beautiful light-airy interiors plus open front terrace; brand-new ground-floor kitchen with open pass and new equipment (thermomix, paco-jets, some induction, etc).
Food offering: bold, contemporary British-European seasonal cooking showcasing top produce sourced from award-winning artisan growers and producers. Rustic style (4 to 5 elements per plate).
Own menus: rolling monthly-changing all day menu (8 / 8 / 5); short lunch menu; daily-weekly specials; Saturday brunch and Sunday Roast
Seasoned, dedicated Management team in place. Open for lunch and dinner Monday to Sunday – also popular for private parties and exclusive hire.
Kitchen hours: Mon – Fri 12.00 pm – 10.00 pm; Sat 10.00 am – 10:00 pm; Sun 11.00 am – 9.00 pm
Approx. £11,000 to £12,000 weekly net food sales and building (£40k net total weekly sales)

ROLE DESCRIPTION
Responsible for all aspects of kitchen management; working closely with the General Manager with the support of a stable brigade (Sous chef, 7 chefs & 2 KPs), duties include:
Daily menu planning including costing & spec. sheets (briefings)
Daily organisation and smooth running of the kitchen and service, ensuring consistently high standards, food quality, optimal team performance
Stock management: purchasing, supplier relations, invoices, monthly stock audits, maintaining 70% GP margin
Rostering, team hiring & development, personnel files (appraisals, disciplinary & grievance)
Compliance records, maintenance of kitchen & equipment, EHO relations
Kitchen admin and reporting, budgeting and cost control (procurement / labour), Operations meetings & tastings

Dedicated management team with particular interest in food / business development. 2019 & 2020 new London openings confirmed.

DESIRED ATTRIBUTES
This role would suit a confident, creative and experienced Chef with a background in quality / rosette level kitchens who loves planning modern British-European menus and has a strong grasp of current trends and seasonal ingredients.
A Chef with lots of energy & drive; good organisation, communication and people management skills; enjoys mentoring and bring on the team.

SALARY & BENEFITS
Start package: £39,000 to £40,000 basic (paid monthly) + £5,000 KPI-related annual bonus (paid quarterly)
Package of £44,000 to £45,000 pa
Permanent contract subject to standard 3 months probationary period; regular salary reviews; courses as required; 5% pension option; movement (new openings confirmed); progression (Area Executive level); 28 days annual leave; group discounts; FAM trips; team excursions; laundered uniform; meals on duty
Approx. 50 – 55 hrs p wk / 7 shifts over 5 days incl. weekends
Immediate start available / able to accommodate notice
