Start package: £52,000 pa (£42,000 basic plus £10,000 bonus)
Working Hrs: 7 Shifts (5 days)

Stylish, hip Mediterranean Restaurant Bar hot-spot situated in the heart of the West End – contemporary interiors with banquets and counter; rolling produce-driven menu focused on quality and seasonality – beautiful food cooked simply (all made in house from scratch) – mix of small / sharing plates centred on cooking over charcoal.
Holding 2 AA rosettes since opening – steady trade through the week (40 to 50 lunch / 60 to 100+ dinner) – peaking during Christmas period. Sourcing premium produce from small UK and Continental suppliers.
7 day operation: 12.00 pm to 10.00 pm / 11.00 pm (busy pre-theatre trade) – attracting a loyal local & London following with high praise, online reviews and ratings since launch.
Av. Weekly food sales: £15,000 to £16,000 net (rising to £30,000 during December)

ROLE DESCRIPTION
Responsible for all aspects of kitchen management; working closely with the General Manager with the support of Sous chef and a stable brigade (6 to 7 chefs & 2 KPs), duties include:

Menu development, specs and costings – seasonal / produce focus
Daily organisation and smooth running of the kitchen and service, ensuring consistently high standards, food quality, optimal team performance
Stock management: purchasing, supplier relations, invoices, monthly stock audits, maintaining 73% GP margin
Team management including hiring, training and development, appraisals, personnel files, etc
Kitchen admin and reporting, budgeting and cost control (procurement / labour), rostering, operations meetings & tastings
Compliance records, maintenance of kitchen & equipment, EHO / local authority relations

DESIRED ATTRIBUTES
Seeking a passionate, creative, confident Head chef with ideally a rosette / restaurant kitchen background.
A Chef with lots of energy & drive; good organisation, communication and people management skills; flair for developing menus and team development.

SALARY & BENEFITS
Start package: £42,000 basic (paid monthly) + £10,000 KPI-related annual bonus (paid quarterly)
Available package of £52,000 pa

Permanent contract subject to standard 6 months probationary period: regular salary reviews (performance / food sales dependent); courses as required; 28 days paid annual leave; workplace pension option; group staff discounts; FAM trips & team excursions; laundered uniform & meals on duty
Future scope: movement within the group; involvement in new openings; executive ops. progression
Av. 50 – 55 hrs p wk / 7 shifts over 5 days incl. Weekends
