Operation: Exclusive Restaurant & 5* Boutique Hotel
Location: Central London
Salary: £26,000 to £27,000 package + Paid OT
Working Hrs: 50 – 53 hrs / 7 shifts over 5 days

This luxury 5* Boutique Hotel & Destination Restaurant with Cocktail Lounge attracts an A list crowd, gaining an unrivalled reputation since launch with ongoing Press and Media interest.
Acclaimed, trend setting Michelin star Executive Chef with brigade of 50 chefs; high spec open kitchen with breakfast / brunch, lunch & dinner menus showcasing ingredients-focused cooking (bold, contemporary, healthy & seasonal) – sourcing from premium growers and producers.
Food style: innovative, modern European with International accents at 3 AA rosette level
Approx. 400 to 600 covers per day (250 for dinner) & ongoing exclusive hire & private parties

ROLE DESCRIPTION
15 chefs led by Head / Sous chef team on main service, responsibilities include:
Running designated section in absence of CDP: pre-service section set-up, daily mise en place & organisation, supervision and delegation on section (good kitchen section rotation)
Daily stock control, receiving deliveries, section orders, wastage control
Commis chef training & supervision
Compliance files, HACCP and cleaning rosters
Own Professional Development – kitchen management, butchery, fishmongery, modern cooking techniques and equipment (incl. Robata grill and Josper oven) – opportunities to progress quickly.

DESIRED ATTRIBUTES
12 months experience as a Demi Chef de partie in a comparable / modern ‘Grand Café’ Restaurant, Members Club or Boutique Hotel operation
Good all round skill set – organisation, technical, communication and attention to detail
Passion to cook & learn – ambition and drive

SALARY & BENEFITS
£26,000 – £27,000 start package (basic & s/c total) + paid overtime (same rate) – monthly payroll cycle
Shift pattern: 7 shifts over 5 days (50 to 55 hrs max.)
Permanent full time contract subject to standard 3 months probationary period
