LOCATION: East London (City)
START PACKAGE: £26,000 pa + paid OT
WORKING HRS: 45 to 50 hrs / 7 shifts over 5 days incl. weekends

COMPANY INFO
Recently rebranded / redesigned modern casual dining restaurant, bar and kitchen with additional meeting space for 50 pax, situated within a cool urban-styled Hotel located in the heart of the City.
Operation: busy breakfast (healthy to hearty); lunch and dinner (menu: inspired grill, salads, small and sharing plates) plus parties and group bookings.
Additional: acoustic sessions, DJs, bands and artists, product launches and receptions.
2019 / 2020 project: plans to develop the extensive rooftop space to include a full kitchen garden, open-air-grill and fire pit with bar – stunning 360° City views.
Expanding group with investment secured – UK & Europe expansion from 2019 onward. Set to launch ten new-build hotels within five to seven year period. Due to launch in Brussels and Manchester over coming twelve months.

ROLE DESCRIPTION
Supporting the Head and Sous chefs with the daily smooth running of the kitchen operation and service, responsibilities include:

Menu input (ideas encouraged)
Designated section set-up; daily mise en place (butchery, fish and vegetable prep); assisting with plating and prompt delivery on the pass ensuring consistently high levels of quality
Assisting with stock management & ordering; wastage / kitchen cost control; deliveries and storage; daily compliance files and procedures; maintenance of equipment
Brigade of 3 to 4 chefs (plus KPs) on service (large basement prep kitchen plus small open service kitchen on dining room floor)
Head chef: passionate, seasoned professional with inclusive, modern management style and mentoring approach.

SALARY & BENEFITS
Start package: £26,000 pa (basic + tronc per annum) + paid overtime for additional shifts worked
Permanent contract subject to standard 3 months probationary period: regular performance-related salary reviews; courses as required; 28 standard paid annual leave; work place pension option; ongoing in-house development; movement and progression; group staff discounts; FAM trips; laundered uniform and meals on duty
7 day operation: working 7 shifts over 5 days including weekends / 45 to 50 hrs weekly total
Immediate start available / able to accommodate notice
