This luxury 5* Boutique Hotel & Destination Restaurant with Cocktail Lounge attracts an A list crowd, gaining an unrivalled reputation since launch with ongoing Press and Media interest (rave reviews).
Acclaimed, trend setting Michelin star Executive Chef with brigade of 50 chefs; high spec open kitchen with designated breakfast and in-room dining kitchens.
A la Carte breakfast / brunch, lunch & dinner menus showcasing ingredients-focused cooking (bold, contemporary, healthy & seasonal) – sourcing from premium growers and producers.
Food style: modern European with International accents at 3 AA rosette level – inspired seasonal breakfast / brunch menu to order – classic dishes with modern twist showcasing farm and estate produce (quality and provenance) supported by seafood and champagne cocktails.

Approx. 80 to 120 breakfast covers per day (up to 300 covers on weekend days) & exclusive hire & private parties
Approx. 400 to 700+ covers per day (200 to 250+ for dinner) & ongoing exclusive hire & private parties
Monday to Friday Breakfast service hrs: 7:00 am to 10:30 am
Saturday & Sunday Breakfast / Brunch service hrs: 8:00 am to 10:00 am / 11:00 am to 3:00 pm

ROLE DESCRIPTION
Breakfast team of 5 chefs (3 chefs on duty), Responsibilities as follows:
Daily fresh food prep and production for busy breakfast service; team support; expediting checks to order; supporting the Snr Breakfast chef with the daily smooth running of the breakfast kitchen operation ensuring delivery of unrivalled 5* quality & service standards

Additional duties: assisting with ordering provisions for breakfast service; receiving goods and storage; food wastage control; maintaining a clean and tidy station; compliance files and procedures; cleaning rosters

A confident, standards orientated Breakfast chef with experience gained within 5* / 4* Hotel operations, ideally in London.
Good communication and organisation skills coupled with good initiative and attention to detail.

SALARY & BENEFITS
£25,000+ start package pa (basic + tronc) & Paid Overtime for additional shifts worked (same rate)
Permanent full time contract subject to standard 3-month probationary period with regular performance-related salary reviews; in-house development; courses as required; movement and progression; 28 days paid annual leave; workplace pension option; FAM trips and team excursions; group / staff discounts; Cycle to Work scheme; laundered uniform and meals on duty
Working Hours: 45 hrs over 5 days (5.00 am to 2.00 pm / 6.00 am to 3.00 pm shift pattern incl. standard breaks)
