POSITION: Assistant General Manager
Operation: Acclaimed Restaurant, Gastro & Terrace (rosette)
Location: City of London
SALARY: £34,500 – £35,500+ pa
WORKING HRS: 5 Days / 7 Shifts (52 to 55 hrs)

This stunning City 3-floor independent (2 AA rosette level) attracts a loyal City crowd all year round, receiving ongoing media and press high-praise since opening.
Operation: ground-floor gastro (wood-panelled bar & period features) / monthly changing modern British (1 AA rosette); first floor open & airy dining room with weekly changing produce-driven menu (seasonal 2 AA rosette Brit-Euro-Med); terrace and open-air grill plus open kitchen – sourcing from small suppliers, farm and estate producers – championing ethical practises and values – focus on quality (and value), overall guest experience.
Menus: robust flavours, good technical elements and quirky touches, great flavours and presentation (all made in-house from scratch) supported by a rotating range of cask craft ales, natural wines and botanical cocktails.
7 day operation – busy for lunch and dinner throughout the week / year….popular for private parties with additional (various) food and wine workshops and events scheduled season to season. Pic-nic hampers on offer / popular during summer months. Informed, relaxed service style – welcoming home-from-home vibe.
Service: 12:00 pm to 3:00 pm lunch (closed Monday lunch); 6:00 pm to 10:30 pm dinner Mon to Sat
Average weekly net sales: £60k to £70k pa (summer months) / av. 1,300 to 1,500+ covers per week

ROLE DESCRIPTION
Working closely with the General Manager, management and the Head / Sous chef teams, responsibilities include:
Overseeing the smooth running of the entire operation in the absence of the General Manager
Opening & closing duties
Managing and organising FOH team (x 30 staff), ensuring the delivery of excellent service levels and customer care on a consistent basis
Ordering of stock, inventory control & stock audits
Team hiring, training & development, personnel files
Daily admin and banking, weekly figure reporting & due diligence files and procedures
Involvement in monthly P&L (sales, purchasing & labour targets)
Developing new business ideas and marketing & promotional strategies to drive sales & raise venue profile (local & online)

DESIRED ATTRIBUTES
This role would suit an Assistant / Restaurant Manager with comparable experience gained in relaxed rosette dining operations who is passionate about service, food and wine.
A standard-orientated Manager who loves to be on the floor, has great people-rapport and attention to detail.
Essential: great people skills and personality coupled with good initiative, organisation & drive.

SALARY & BENEFITS
Start package: £30,000 basic plus £4,000 to £5,000 tronc allocation (paid monthly) plus discretionary bonus (performance / sales dependent)
Package of £34,500 to £35,500+ pa (including annual £500.00 group management tab)
Permanent full-time contract subject to standard 3 months probationary period incl. regular performance related salary reviews; ongoing in-house development; courses as required; workplace pension option; 28 days paid annual leave; movement and progression within this famed independent group; involvement in new openings (4th large City opening due to launch end of 2019); annual £500.00 management tab to use at all group venues; FAM trips; team excursions; staff discounts; meals on duty
Approx. 52 – 55 hrs p wk / 7 shifts over 5 days
